Watermelon Paiche Ceviche


Channeling that Little Mermaid feeling with this Watermelon Paiche Ceviché! It makes you feel like Ariel and eat like King Titan without making you look like Ursula. I’m so happy I get to make this “part of your world.”

1/2 lbs Paiche or other white fish
6 oz fresh watermelon, cubed
4 radishes, half mooned
1 serrano pepper, sliced into circles
1 Cup red wine vinegar, divided
Juice of 1 lime
Black sesame seeds, for garnish
Flaky salt

Cube watermelon into roughly 1 centimeter cubes. Thinly slice radishes and then halve them into half moon shapes. Slice serrano into circles and putt all into a bowl. Pour 1/2 Cup of the red wine vinegar over and mix. Set in the fridge to marinate while you prepare the fish.  

Cube the fish to match the size of the watermelon cubes. Add to a separate bowl and top with the remaining 1/2 Cup of red wine vinegar and the lime juice. Let the fish marinate on it’s on for about 20 minutes or until it turns opaque.

Once the fish is opaque, drain the liquid through a fine mesh sieve and add all ingredients together. Plate as individual servings (as shown) or you can serve the full dish in a freezing cold bowl for a larger crowd. Finish with a touch of crunchy sea salt and a generous sprinkling of black sesame seed.
