Herby Oven Roasted Radishes

Baby, you are radishing! These roasted radishes are beauties but when you pair them with s glass of rosè and some sunshine, you’ve got yourself the best lil happy hour. I love this simple dish as a snack or a light side piece to a beautiful, rich steak.


INGREDIENTS
1 Pound radishes, halved, leaves trimmed (save the leaves)
1 Tbl olive oil plus more for finishing
2 Sprigs of thyme
S+P

PREPARATION 
Preheat oven to 450 F. Place radishes, leaves and thyme on a foil-lined baking sheet. Add oil, salt and pepper, toss to coat. Bake for 12-15 minutes, until skin is wrinkled but not browned. Plate and finish with a drizzle of olive oil, salt and pepper to taste.
